Roasted Root Vegetables
Ingredients:
- Two small or one large beet
- One turnip
- Two parsnips
- Four carrots
- ½ cup Sweet Jeans original or “With a Kick” mustard
Directions:
- Preheat the oven to 425 degrees
- Peel all vegetables and cut into ¼ inch diced pieces
- Place all vegetables in a bowl and toss with ½ cup Sweet Jeans Original mustard until all vegetables are coated.
- Spread the coated vegetables on a foil-lined baking sheet
- Place the baking sheet on the upper rack of the preheated oven for 15 minutes, then stir the vegetables and cook for another 10 minutes.
- Remove from the oven, serve and enjoy!
